Jellyfin is open source, Plex is closed source. By default, with Plex, only you have access to watch your videos. You can give permission to other users with a Plex account to get access to watch your videos, but without that, nobody else has permission to view your stuff. A couple times, when traveling, I've brought one of my streaming devices with the Plex client app installed (which I've already logged into) and plugged it into hotel TVs (using hotel wifi) and I haven't had a problem watching my content remotely.
