There are actually all kinds! Some will auto-zoom-and-adjust what they think
the document is in the photo.. some will give you a box to select the corners
of the document with yourself so that it can zoom in and adjust. Then some will
go further and convert the picture to a totally white background to keep the
size lower. And then there are some that have OCR features, but I think those
are usually paid. I have a separate open source app for OCR, but I never really
use it. Converting a zoomed in and fixed up photo of a doc to PDF is usually
sufficient for me.
