      Title: Roast Possum With Sweet Potatoes
 Categories: Game
      Yield: 1 Batch
 
      1    Possum
      6    Yams
      1 lg Onion
      2 cl Garlic
      6    Red pepper pods
           Salt; to taste
 
  First catch possum. To dress possum, scald possum with 2 gallons
  boiling water. Skin off hide at once. Scrape well. Cut off feet,
  tail, and remove entrails (intestines). If head is left on, remove
  eyes and ears. Cleanse thoroughly with hot water. Soak in cold water,
  adding 1 cup salt. Let stand for 12 hours. Remove from salted water
  and wash. Put possum in enough water to boil and add salt to taste.
  Add 6 red pepper pods, cut onion into 4 parts, and add to possum pot.
  Cook until tender.
  
  Have ready 6 whole peeled sweet potatoes. Lay possum out flat in
  roasting pot. Put sweet potatoes all around possum with sufficient
  amount of stock skimmed from boiling.
  
  Bake in 400?F oven until nice and brown. Baste occasionally. Serve
  on a platter using sweet potatoes and parsley for garnishing.
