      Title: Crab Omelet
 Categories: Breakfast, Eggs
      Yield: 6 Servings
 
      3 tb Butter
      2 tb Shallots
      1 cl Garlic; minced
      1 ts Ginger
    3/4 c  Zucchini; sliced
    1/2 lb Crab meat
      5    Eggs; with:
    1/2 c  Milk; beaten together
    1/2 c  Parmesan cheese; grated
      2    Parsley sprigs
 
  Saute in hot butter, chopped shallots, garlic, and ginger, until
  onions are tender but not browned.
  
  Add to the saute mixture, zucchini squash, and cook until golden.
  Remove pan from heat and add crab meat.
  
  Return the pan to the stove at medium heat and pour egg mixture over
  the vegetables and allow the eggs to brown slightly. Turn the mixture
  over as you would an omelet and brown the other side.
  
  Sprinkle cheese on top and broil until crisp. Add the parsley just
  before serving.
