      Title: Mushroom & Shallot Focaccia

      Yield: 1 Focaccia
 
      6    Cremini mushrooms;
           - stems removed,
           - caps thinly sliced
      2    Shallots;
           - halved lengthwise,
           - thinly sliced
      2 tb Olive oil
    1/2 ts Dried marjoram
           Salt
           Black pepper; freshly ground
           Traditional Pizza Dough
 
  Preheat oven to 400?F.
  
  Place the sliced mushrooms and shallots in a medium-sized bowl. Add
  the olive oil, marjoram, and salt & pepper to taste. Toss to coat
  well and set aside.
  
  Punch the dough down. On a lightly floured work surface, roll out or
  stretch the dough into a circle or rectangle. Lightly oil a pizza pan
  or baking sheet and place the dough on it, stretching it to fit.
  Press the mushroom mixture into the top, keeping the mushroom slices
  in a single layer. Bake on the bottom oven rack until the crust is
  golden brown, about 30 minutes. Serve warm or at room temperature.
