      Title: Encurtido Salvadoreno (Salvadoran Pickled Cabbage)
 Categories: Pickles, Salvadorian
      Yield: 1 Batch
 
      1 md Cabbage; chopped
      2 sm Carrots; grated
      1 sm Onion; sliced
    1/2 ts Dried red pepper flakes
           - (optional)
    1/2 ts Oregano
      1 ts Olive oil
      1 ts Salt
      1 ts Brown sugar
    1/4 c  Vinegar
    1/2 c  Water
 
  Blanch the chopped cabbage in boiling water for 1 minute. Discard the
  water.
  
  Place the cabbage in a large bowl and add the grated carrots, sliced
  onion, red pepper, oregano, olive oil, salt, brown sugar, vinegar,
  and water.
  
  Place in the refrigerator for at least 2 hours before serving.
  
  Serve with Pupusas Revueltas or as a side for other dishes.
