      Title: Thai Pesto Focaccia
 Categories: Breads
      Yield: 1 Focaccia
 
      2 c  Fresh Thai basil leaves;
           - loosely packed
      2 cl Garlic; crushed
    1/2 c  Unsalted peanuts;
           - dry-roasted
      1 sm Fresh hot red chile;
           - up to 2; seeded
    1/2 ts Salt
    1/4 c  Neutral vegetable oil
           Enriched pizza dough
 
  Preheat oven to 400?F.
  
  In a food processor, combine the basil, garlic, peanuts, chile, and
  salt. Process until the mixture turns into a paste. With the machine
  running, add the oil through the feed tube and process until well
  blended. Set aside.
  
  Punch the dough down. On a lightly floured work surface, roll out or
  stretch the dough into a circle or rectangle. Lightly oil a pizza pan
  or baking sheet and place the dough on it, stretching it to fit. Bake
  on the bottom oven rack for 8 minutes.
  
  Remove from the oven and top with the pesto, pressing it lightly into
  the dough. Bake on the bottom oven rack until the crust is golden
  brown, about 20 minutes longer. Serve warm or at room temperature.
