      Title: Tempting Tempeh Sandwiches
 Categories: Sandwiches, Vegetarian
      Yield: 4 Servings
 
    1/4 c  Vegan mayonnaise
      2 ts Prepared mustard
      2 tb Rice vinegar
      1 tb Low-sodium tamari
    1/2 ts Sriracha
      8 oz Tempeh; steamed & cooled
    1/2 c  Pineapple;
           - up to 3/4 c,
           - fresh or canned,
           - finely chopped,
           - blotted dry
      2    Celery ribs; minced
      4    Scallions; minced
    1/2 c  Unsalted cashews;
           - dry roasted &
           - chopped or crushed
    1/4 ts Salt; up to 1/2 ts
    1/4 ts Black pepper; freshly ground
      8 sl Bread
           Lettuce leaves.
 
  In a mixing bowl, combine the mayonnaise, mustard, vinegar, tamari,
  and sriracha. Mix until well blended. Finely chop the steamed and
  cooled tempeh and add it to the bowl. Stir in the pineapple, celery,
  scallions, and cashews, and season with salt & pepper. Mix well. The
  sandwich filling can be used immediately or covered and refrigerated
  for later.
  
  If you prefer a finer texture to this spread you can combine all of
  the ingredients in a food processor and pulse to the desired
  consistency.
  
  To make the sandwiches, spread the tempeh mixture onto your favorite
  bread, top with lettuce leaves, and serve.
