      Title: Fried Green Tomato Po'boys
 Categories: Sandwiches
      Yield: 2 Servings
 
      3    Green tomatoes;
           - halved lengthwise,
           - sliced 1/2"-thick
           Salt
           Black pepper; freshly ground
    3/4 c  Dry bread crumbs
    1/2 ts Old Bay seasoning
      2 tb Olive oil
      2    Sub rolls (6");
           - split horizontally
      2 tb Vegan mayonnaise
      2    Romaine lettuce leaves
    1/2 c  Tempeh "Bacon Bits"; warm
           Tabasco sauce
 
  Season the tomatoes with salt & pepper to taste. Combine the bread
  crumbs and Old Bay seasoning in a shallow bowl. Add the tomato slices
  and toss gently to coat evenly. Set aside.
  
  Heat the olive oil in a large skillet over medium-high heat. Add the
  tomato slics and cook until golden brown on both sides, about 4
  minutes per side. Remove from the heat and transfer to paper towels
  to drain.
  
  Spread the vegan mayonnaise on the cut sides of the sub rolls. Line
  the bottom half of each roll with a lettuce leaf. Sprinkle each with
  half of the tempeh "bacon bits." Arrange the tomatoes on top,
  sprinkle with Tabasco, and replace the top half of the roll. Serve
  with the bottle of Tabasco on the table.
