      Title: Curried Tempeh Salad Sandwiches
 Categories: Sandwiches, Vegetarian
      Yield: 4 Servings
 
      8 oz Tempeh; steamed & cooled
      1    Celery rib; minced
      2    Scallions; minced
      2 tb Red bell pepper; minced
    1/4 c  Golden raisins
      2 tb Slivered almonds
      1 tb Fresh parsley; minced
    1/2 c  Vegan mayonnaise;
           - up to 3/4 c
      1 tb Sweet pickle relish
      2 ts Curry powder
      1 ts Fresh lemon juice
    1/2 ts Natural sugar
           Salt
           Black pepper; freshly ground
           Romaine lettuce; shredded
      2 lg Pita breads (4 sm);
           - cut in half
 
  Grate or finely chop the tempeh and place in a large bowl. Add the
  celery, scallions, bell pepper, raisins, almonds, and parsley. Stir
  in the vegan mayonnaise, relish, curry powder, lemon juice, sugar,
  and salt & pepper to taste. Mix until thoroughly combined. Cover and
  refrigerate for at least 30 minutes to allow the flavors to blend.
  
  To assemble, stuff a small amount of the shredded lettuce into each
  pita half. Spoon the tempeh mixture into each half, dividing it
  evenly among the halves. Tuck a little more lettuce into each
  sandwich, if desired, and serve.
