      Title: Grilled Vegetable Wraps
 Categories: Sandwiches, Vegetarian
      Yield: 2 Servings
 
      1 lg Red onion; cut into 1/4"
           - thick pieces
      1 lg Red bell pepper;
           - halved & seeded
      1 lg Portobello mushroom cap;
           - gills scraped out
      1 md Zucchini; cut diagonally
           - into 1/4" thick slices
      2 tb Olive oil
           Salt
           Black pepper; freshly ground
      2 lg Lavash or flour tortillas
      2 tb Vegan mayonnaise
 
  A grill basket or perforated metal grill pan will help keep the
  zucchini and other smaller piece of vegetables from falling throuh
  the rack. If unavailable, you can skewer the vegetables before
  grilling.
  
  Preheat the grill. Brush the onion, bell pepper, mushroom, and
  zucchini wih the olive oil and season to taste with salt & pepper.
  Grill the vegetables until tender on the inside and slightly charred
  on the outside, turning once. Cut the grilled vegetables into 1/2"
  wide strips.
  
  Place the lavash on a flat surface. Spread a thin layer of vegan
  mayonnaise over the surface and place the vegetable strips along the
  lower 3rd of each flatbread. Beginning at the end with the filling,
  roll up into a cylinder. Cut each sandwich in half and serve seam
  side down.
