      Title: Seitan Reubens
 Categories: Sandwiches, Vegetarian
      Yield: 2 Servings
 
      2 tb Vegan mayonnaise
      1 tb Ketchup
      1 tb Sweet pickle relish
           Salt
           Black pepper; freshly ground
      2 tb Olive oil
      4 sl Rye bread
      6 oz Seitan; thinly sliced
    1/2 c  Sauerkraut; well drained
      2 sl Vegan cheese -OR-
    1/4 c  Cheesy Sauce
 
  In a small bowl, combine the vegan mayonnaise, ketchup, and relish.
  Season to taste with salt & pepper, blend well, and set aside.
  
  Brush a small amount of olive oil on one side of each slice of bread.
  Place the bread, oiled sides down, on a flat surface and spread the
  mayonnaise mixture on the other side of each slice.
  
  Layer the seitan, sauerkraut, and vegan cheese on two of the bread
  slices and top with the remaining two bread slices, oiled sides up.
  
  Heat the remaining olive oil in a large skillet over medium heat.
  Place the sandwiches in the skillet and cook, turning once, until
  golden brown on both sides, about 2 minutes per side. Remove from the
  skillet, cut in half, and serve hot.
  
  Serve with vegan coleslaw, potato chips, and a dill pickle spear for a
  great deli-style lunch.
