      Title: Three Nut Burgers
 Categories: Veggie, Burgers
      Yield: 6 Servings
 
      3 tb Olive oil
    1/2 c  Onion; minced
      1 c  Brown lentils;
           - cooked or canned,
           - rinsed & drained
      1 c  Walnuts; chopped
    2/3 c  Dry bread crumbs
    1/2 c  Unsalted cashews;
           - dry-roasted, chopped
      2 tb Almond butter
      1 tb Fresh parsley; minced
    1/2 ts Salt
    1/8 ts Black pepper; freshly ground
 
  Heat 1 tb olive oil in a large skillet over medium heat. Add the
  onion and cook until softened, about 5 minutes. Transfer to a food
  processor and add the remaining ingredients except the remaining
  olive oil. Process until well blended. If the mixture is too wet, add
  some vital wheat gluten or old-fashioned rolled oats, 1 to 2 tb at a
  time, to reach the desired consistency.
  
  Shape the mixture into 6 patties. Heat the remaining 2 tb olive oil
  in a large skillet over medium heat and cook the burgers until well
  browned on both sides, about 5 minutes per side. Alternatively, place
  the patties on a lightly oiled baking sheet and bake at 350?F until
  browned on both sides, turning once, 20 to 30 minutes total. Serve
  hot.
  
  Instead of serving them on burger rolls, you can serve them as an
  entree topped with Basic Brown Sauce.
