      Title: Red Bean & Coconut Pie
 Categories: Pies, Soul food
      Yield: 1 Pie
 
      1    Unbaked pie shell (9")
      2 c  Karo syrup
  1 1/4 c  Sugar
      3    Eggs
      1 c  Shredded coconut
    3/4 c  Cooked red beans
      1 ts Nutmeg
    1/4 ts Salt
      3 tb Cinnamon
 
  Mix syrup, sugar, and eggs in bowl. Add cinnamon, salt, and nutmeg.
  Mix well. Add red beans and coconut. Stir until moist.
  
  Pour into a 9" unbaked pie shell. Cook for 1-1/2 hours or until done
  at 300?F.
