      Title: Ham Patties With Egg Sauce

MMMMM------------------------HAM PATTIES-----------------------------
      2 c  Cooked ham; ground
      1 c  Mashed potatoes
      1 tb Onion; chopped
    1/4 ts Dry mustard
    1/4 ts Salt
      1 tb Milk
      1    Egg; beaten
    1/2 c  Fine dry bread crumbs
      3 tb Fat or oil
MMMMM-------------------------EGG SAUCE------------------------------
      1 tb Fat; up to 2 tb
      2 tb Flour
    1/4 ts Salt
      1 c  Milk
      3    Eggs; hard-cooked, chopped
      1 tb Lemon juice
           Yellow food coloring;
           - a few drops (optional)
 
  Ham Patties:
  
  Combine ground ham, mashed potatoes, onion, mustard, and 1/4 ts salt.
  Chill about 1 hour. Shape into 12 patties.
  
  Blend milk into beaten egg. Dip patties in egg mixture and then in
  crumbs.
  
  Fry patties in hot fat until golden brown. Serve with egg sauce.
  
  Egg Sauce:
  
  Melt butter, margarine, or other fat in heavy saucepan. Blend in flour
  until smooth. Add salt. Add milk slowly, stirring rapidly to prevent
  lumping. Bring mixture to a boil, stirring constantly. Reduce heat
  and cook 1 minute, stirring constantly. Remove from heat. Add eggs,
  lemon juice, and yellow food coloring, if using. Stir.
  
  Yield: 1 Cup
